OH. MY. GOODNESS. I did not know I could like a healthy food as much as this one!
Wow oh wow. This one is good guys. I really mean it. I was a chia pudding skeptic, but now I don't think I'll have yogurt without chia pudding.
This is the simplest recipe ever. It only took me 15 minutes max to make up four jars of parfait.
Chia & Fruit Parfait
Ingredients:
Coconut Milk
Chia Seeds
Greek Yogurt
Honey
Fruit
Directions:
Scoop about a cups worth of greek yogurt into an individual jar or bowl. Drizzle honey on top of it. In a separate bowl, scoop two spoonfuls of chia seeds and add about a 1/4 cup of coconut milk.
Let sit for 15 minutes.
Give the chia a stir. If it is top gelatinous add more coconut milk, if it is too thin, add more chia and stir the chia mixture again.
Once the chia has reached your desired consistency, spoon it on top of the yogurt.
Add chopped fruit on top along with a honey drizzle.
Serve now, refrigerate, or (if in proper container) freeze.
