$0.72 Breakfast Sandwiches

Now, I don't know about you, but I LOVE breakfast foods. I hate how expensive they are though! $3.29 for ONE Egg McMuffin?!?!! That is just insane. I can make 12 for $8.65 ($0.72/sandwich) and so can you!



I get pretty hangry towards 11am. Most mornings I have 4 cups of coffee and skip breakfast altogether. Lately, my hangry attitude has gotten a bit out of hand and started to affect my productivity. That's why this week, instead of having cereal in the house and never eating it for some reason even though Honey Bunches of Oats is the bomb, I'm giving myself some extra incentive and making tasty sandwiches!

These bad boys don't take too much effort to put together. Throw some bacon and eggs in the oven for 15 minutes. Toast the english muffins (or don't and save time) and assemble! I'm wrapping them up individually in a damp paper towel and foil and throwing them in my freezer until I want to eat them. Thaw before reheating, they have a 3-4 day shelf life in the fridge. If you're just reheating in the oven, you can probably skip the damp paper towel step and heat at 420 degrees for 20 minutes or so. But I highly suggest keeping that step for microwave purposes. If microwaving, simply remove foil before use and pop the paper-wrapped sandwich in the microwave for 30 seconds at a time until it is heated as desired.


Breakfast sandwiches are so simple. And really cheap as you can see below. I went to Aldi and Kroger for my items.


Bacon: $3.49

American Cheese: $1.29

Eggs: $1.49 (I bought two dozen because I needed more for other meals)

Two 6-packs of English Muffins: $1.19/pack

Total: $8.65

Total amount of sandwiches: 12



To make the eggs I prefer to use a muffin tin and individually crack and whisk an egg into each hole. I seasoned them all with some salt and pepper and threw them in the oven. You can throw the bacon (sliced in half or quarters) in the oven at the same time. They both take about 10-15 minutes at 350 degrees.




Okay, but please take a look at how adorable this tiny piece of bacon is!!



After the bacon and eggs are out of the oven, let cool for about 10 minutes. While they're cooling, you can use broil the inside of the english muffins to toast them, if you like toasted sandwiches. After everything is at room temperature it is time for assembling!




Add that delicious processed and bad-for-you cheese. Your taste buds with thank me later.

$0.72 Breakfast Sandwiches


Ingredients:

12 English Muffins

12 Eggs

12 Slices of Cheese (Your preference)

1 Pack of Bacon


Directions:

Preheat oven to 350 degrees.

Cut the pack of bacon either in half or into four equal parts. Place the bacon on a baking sheet lined with parchment paper. Lightly oil a muffin tray. Put one egg in each hole. Flavor with salt and pepper. Whisk if you prefer scrambled, leave for 'hard-boiled'. Bake the eggs and bacon for 10-15 minutes, then set aside to cool.

If toasting the english muffins, place the muffin halves inside up on a baking sheet. Use bacon grease to 'butter' the muffins. Broil in the oven until desired toastiness. Set aside to cool.

Assemble the sandwiches with the egg, bacon, and cheese.

Eat or store.


Storing:

Wrap in a damp paper towel and then in foil. Freeze for up to 3 months, refrigerate for up to 3-4 days.

Oven Reheating:

Thaw before reheating.

Preheat oven at 420, cook for 20 minutes


Microwave Reheating:

Thaw before reheating.

Remove foil. Place the paper towel wrapped sandwich in the microwave and heat in 30-second intervals until hot.

I made these on Sundays for Grandma Ziemba. We had Canadian bacon and sharp white cheddar. Thanks for reminding me.💜
